This beef stew with carrot flowers is not only delicious and comforting, but also visually striking with delicate carrot flowers decorating the dish. It's the perfect dish to impress guests or simply enjoy a cozy homemade meal.

Ingredients

  • 2 lbs beef stew meat, cut into cubes
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, peeled and sliced
  • 2 potatoes, peeled and diced
  • 3 cups beef broth
  • 1 cup red wine
  • 1 tbsp Worcestershire sauce
  • 1 tsp thyme
  • Salt and pepper to taste
  • 6-8 large carrots, peeled and cut into thin strips
  • 1 cup water
  • 2 tbsp sugar

Directions

  1. In a large pot, heat the olive oil over medium heat. Add the beef stew meat and brown on all sides. Remove from pot and set aside.
  2. In the same pot, add the onion and garlic. Cook until softened.
  3. Add the carrots, potatoes, beef broth, red wine, Worcestershire sauce, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 1.5 hours, or until meat is tender.
  4. In the meantime, make the carrot flowers. Using a vegetable peeler, make thin strips of carrots. In a small saucepan, combine water and sugar. Bring to a boil, then add the carrot strips. Cook for 2 minutes, then remove from heat and let cool. Roll the carrot strips into flower shapes.
  5. Serve the beef stew in bowls, garnished with the carrot flowers. Enjoy!
