This marinated mushroom salad is a wonderful combination of earthy mushrooms, tangy marinade, and fresh herbs. It's a great side dish for any summer gathering!
Ingredients
- 1 lb cremini mushrooms, sliced
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 2 cloves garlic, minced
- 1 tsp Dijon mustard
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Directions
- In a large bowl, whisk together the olive oil, balsamic vinegar, garlic, Dijon mustard, parsley, salt, and pepper.
- Add the sliced mushrooms to the marinade and stir until well coated. Cover and refrigerate for at least 2 hours, stirring occasionally.
- Before serving, taste and adjust seasoning as needed. Serve chilled and enjoy!
