This autumn-inspired sweet potato shepherd's pie is a comforting and hearty dish that is perfect for the cooler months. It combines the flavors of fall with sweet potatoes, seasonal vegetables, and savory ground meat all topped with a creamy sweet potato mash.

Ingredients

  • 1 lb ground beef or lamb
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 1 cup frozen peas
  • 1 cup corn
  • 2 tbsp tomato paste
  • 1 cup beef or vegetable broth
  • 2 tbsp Worcestershire sauce
  • 4 sweet potatoes, peeled and cubed
  • 1/2 cup milk
  • 4 tbsp butter
  • Salt and pepper to taste

Directions

  1. Preheat oven to 375°F.
  2. In a large skillet, brown the ground meat over medium heat, breaking it apart with a spoon.
  3. Add the onions, garlic, and carrots, and cook until the vegetables are softened.
  4. Stir in the tomato paste, broth, Worcestershire sauce, peas, and corn. Cook for another 5 minutes.
