Ingredients

  • 1 whole turkey, 12-15 pounds
  • 1 gallon vegetable broth
  • 1 cup sea salt

  • 1 tablespoon dried sage
  • 1 tablespoon dried thyme
  • 1 tablespoon dried savory
  • 1 gallon ice water
  • 1 onion, quartered
  • 1 orange, quartered
  • 1 lemon, quartered
  • 2 bay leaves
  • 1 tablespoon whole black peppercorns
  • 1 tablespoon allspice berries

Directions

  1. In a large stockpot, combine vegetable broth, sea salt, rosemary, sage, thyme, and savory. Bring mixture to a boil, stirring to dissolve salt.
  2. Remove from heat and let cool to room temperature.
  3. Stir in ice water.
  4. Place turkey in a large brining bag, breast side down.
  5. Pour brine mixture over turkey.
  6. Add onion, orange, lemon, bay leaves, peppercorns, and allspice berries.
  7. Tie bag and refrigerate for 24 hours.
  8. Preheat oven to 325°F (165°C).
  9. Remove turkey from brine and pat dry with paper towels.
  10. Discard brine and aromatics.
  11. Place turkey on a roasting rack in a roasting pan.
  12. Roast turkey in preheated oven until internal temperature reaches 165°F (75°C).
  13. Let turkey rest for 20 minutes before carving.
