This recipe combines the nuttiness of roasted cauliflower, the crunch of kale chips, and the brightness of citrus to create a flavorful and satisfying dish. Perfect for a light lunch or a nutritious side dish for dinner.

Ingredients

  • 1 head of cauliflower, cut into florets
  • 1 bunch of kale, stems removed and torn into pieces
  • 1 lemon, zested and juiced
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 400°F.
  2. In a large bowl, toss the cauliflower florets with 1 tablespoon of olive oil and season with salt and pepper. Spread them out on a baking sheet and roast for 25-30 minutes, or until golden brown and tender.
