Ingredients

  • 3 cups thinly sliced zucchini
  • 3 cups thinly sliced tomatoes
  • 2 cups thinly sliced onions
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme leaves

  • 1 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese

Directions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, combine zucchini, tomatoes, onions, olive oil, thyme, oregano, garlic powder, black pepper, and salt. Toss until vegetables are evenly coated.
  3. Spread the vegetable mixture in an even layer in a 9x13-inch baking dish.
