Ingredients
- 2 zucchini
- 2 tablespoons olive oil
- 1/2 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup freshly chopped parsley
Directions
- Using a spiralizer, spiralize the zucchini into ribbons.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the onions and garlic and cook until softened, about 5 minutes.
- Add the zucchini ribbons, oregano, salt, and pepper, and cook until the zucchini is tender and lightly browned, about 5 minutes.
- Stir in the parsley and serve.
