Ingredients

  • 2 zucchini
  • 2 tablespoons olive oil
  • 1/2 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup freshly chopped parsley

Directions

  1. Using a spiralizer, spiralize the zucchini into ribbons.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the onions and garlic and cook until softened, about 5 minutes.
  4. Add the zucchini ribbons, oregano, salt, and pepper, and cook until the zucchini is tender and lightly browned, about 5 minutes.
  5. Stir in the parsley and serve.
