Ingredients

  • 2 medium-sized zucchini, grated
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup bread crumbs
  • 2 tablespoons olive oil

Directions

  1. Preheat oven to 400 degrees F (200 degrees C). Grease a baking sheet.
  2. In a large bowl, combine the zucchini, garlic, oregano, basil, red pepper flakes, black pepper, Parmesan cheese, and bread crumbs. Mix until everything is well combined.
  3. Form the mixture into small patties, about 2 inches in diameter. Place them on the prepared baking sheet.
  4. Brush the tops of the patties with olive oil. Bake for 15 minutes, or until golden brown.
  5. Serve warm.
