Directions
- In a medium bowl, whisk together the eggs, mustard, vinegar, lemon juice, sugar, and salt until combined.
- Slowly add the vegetable oil, a few drops at a time, while whisking continuously. As you add more oil, the mixture will begin to thicken.
- Once the mixture is thick and creamy, slowly stream in the olive oil while continuing to whisk. The mixture should become even thicker.
- Taste the mayonnaise and add more salt, lemon juice, or sugar if desired.
- Transfer the mayonnaise to an airtight container and store in the refrigerator for up to 1 week.
