Ingredients

  • 2 large eggs, at room temperature
  • 1 teaspoon Dijon mustard
  • 1 tablespoon white wine vinegar
  • 2 teaspoons freshly squeezed lemon juice
  • 1 teaspoon sugar
  • ½ teaspoon salt
  • ½ cup vegetable oil
  • ¼ cup extra-virgin olive oil

Directions

  1. In a medium bowl, whisk together the eggs, mustard, vinegar, lemon juice, sugar, and salt until combined.
  2. Slowly add the vegetable oil, a few drops at a time, while whisking continuously. As you add more oil, the mixture will begin to thicken.
  3. Once the mixture is thick and creamy, slowly stream in the olive oil while continuing to whisk. The mixture should become even thicker.
  4. Taste the mayonnaise and add more salt, lemon juice, or sugar if desired.
  5. Transfer the mayonnaise to an airtight container and store in the refrigerator for up to 1 week.
