Ingredients
- 250g plain flour
- 125g butter
- 1 teaspoon of sugar
- Pinch of salt
- 3-4 tablespoons of cold water
- 200g of dried fruit
- 50g of brown sugar
- 1 teaspoon of mixed spice
- 1 tablespoon of brandy or rum
Directions
- Preheat the oven to 200C/400F.
- In a bowl, combine the flour, butter, sugar and salt.
- Rub the butter into the flour until the mixture resembles breadcrumbs.
- Add the cold water and mix until the mixture comes together to form a dough.
- Roll out the dough on a lightly floured surface and cut out circles using a cookie cutter.
- Place the circles of dough on a greased baking tray and set aside.
- In a bowl, combine the dried fruit, brown sugar, mixed spice and brandy or rum.
- Spoon the mixture into the centre of each circle of dough.
- Fold the circles of dough in half and press the edges together to seal them.
- Bake the Eccles cakes for 30 minutes, until golden brown.
- Remove from the oven and serve warm or cold.

- Eccles cakes are believed to have originated in the town of Eccles in England.
- They were traditionally made with beef suet as well as dried fruit.
- Eccles cakes are often served with a cup of tea.
