Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into small cubes

  • 2 carrots, peeled and diced
  • 2 stalks celery, diced
  • 2 medium sweet potatoes, peeled and diced
  • 6 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Directions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chicken and cook until browned and cooked through.
  3. Remove the chicken from the pot and set aside.
  4. In the same pot, add the onion, garlic, carrots, and celery. Cook until the vegetables are tender.
  5. Add the sweet potatoes, chicken broth, dried thyme, and dried rosemary. Season with salt and pepper.
  6. Bring the soup to a boil, then reduce the heat and simmer for 20 minutes or until the sweet potatoes are soft.
  7. Using an immersion blender, puree the soup until smooth. If you don't have an immersion blender, you can transfer the soup to a blender and blend in batches, being careful not to overfill the blender.
  8. Return the soup to the pot and add the cooked chicken. Cook for an additional 5 minutes to heat the chicken through.
  9. Serve the soup hot, garnished with fresh parsley.
