  • 1 red bell pepper, seeded and chopped
  • 1 cup frozen corn kernels
  • 1 bay leaf

Directions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and minced garlic and cook until the onion is translucent and the garlic is fragrant, about 5 minutes.
