This recipe takes the classic Lebkuchen-VI cookie and adds a modern twist. These cookies are soft, spicy, and perfect for the holidays. The combination of spices and flavors will transport you to a German Christmas market.

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 cup unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup honey
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped almonds
  • 1/2 cup chopped candied orange peel
  • 1/2 cup chopped candied lemon peel
  • 1/2 cup confectioners' sugar
  • 2 tablespoons water

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, cloves, nutmeg, cinnamon, and ginger.
  3. In a separate bowl, cream together the butter and brown sugar until smooth. Beat in the honey, egg, and vanilla extract.
  4. Gradually stir in the dry ingredients until well blended. Fold in the almonds, candied orange peel, and candied lemon peel.
  5. Drop dough by teaspoonfuls onto the prepared baking sheet. Bake for 10 to 12 minutes in the preheated oven, or until lightly browned.
  6. While the cookies are baking, mix the confectioners' sugar and water together to make a glaze. Drizzle over the warm cookies before serving.
