Ingredients

  • 1 refrigerated pie crust
  • 2 tablespoons olive oil
  • 1 small red onion, diced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 2 cups fresh baby spinach, chopped
  • 1 cup grated Gruyère cheese
  • 1/2 cup ricotta cheese
  • 1/2 cup half-and-half
  • 2 large eggs, lightly beaten

Directions

  1. Preheat oven to 375°F. Unroll the pie crust and fit it into a 9-inch pie plate.
  2. In a large skillet, heat olive oil over medium heat. Add diced onion and cook for 3 minutes, stirring occasionally.
  3. Add garlic powder, oregano, pepper, and salt. Cook for an additional 1 minute, stirring occasionally.
  4. Add spinach and cook for 2 minutes, stirring occasionally, until spinach is wilted. Remove from heat.
  5. In a medium bowl, combine Gruyère cheese, ricotta cheese, half-and-half, and eggs. Whisk together until well blended.
  6. Add spinach mixture to the cheese mixture and stir to combine.
  7. Pour the mixture into the prepared pie crust. Place the pie plate on a baking sheet.
  8. Bake in preheated oven for 45 minutes, or until the center is set and the edges are golden brown.
  9. Remove from oven and let cool for 10 minutes before slicing and serving.
