Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 4 cups vegetable broth
  • 2 cups pumpkin puree
  • Salt and pepper to taste
  • Optional: 1/4 cup heavy cream

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and cook until softened, about 5 minutes.
  3. Add the cumin, paprika, oregano, nutmeg, cinnamon, and ginger and cook until fragrant, about 1 minute.
  4. Add the vegetable broth and pumpkin puree and stir to combine.
  5. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.
  6. Season with salt and pepper to taste.
  7. Optional: add the heavy cream and stir to combine.
  8. Serve hot.
