Ingredients

  • 2 cups rolled oats
  • 1/2 cup all-natural peanut butter
  • 1/4 cup honey
  • 1/4 cup dark brown sugar
  • 1/4 cup shredded coconut
  • 1/4 cup chopped nuts (optional)
  • 1/2 teaspoon vanilla extract

Directions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, combine oats, peanut butter, honey, brown sugar, coconut, nuts (if using), and vanilla extract.
  3. Mix until everything is combined and the mixture is sticky.
  4. Line an 8x8 inch baking pan with parchment paper and press the oat mixture evenly into the pan.
  5. Bake in preheated oven for 25 minutes or until the edges are golden brown.
  6. Let cool completely before cutting into bars.
