Ingredients

  • 2 tablespoons of olive oil
  • 1 onion, diced
  • 4 cloves of garlic, minced
  • 2 cups of mushrooms, sliced
  • 2 tablespoons of miso paste
  • 4 cups of vegetable broth
  • 1/2 cup of seaweed, such as nori
  • Salt and pepper to taste

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic and sauté for 2-3 minutes, until the onion is softened.
  3. Add the mushrooms and cook for another 2-3 minutes.
  4. Stir in the miso paste and vegetable broth and bring to a simmer.
  5. Add the seaweed to the pot and simmer for 10 minutes.
  6. Season the soup with salt and pepper to taste.
  7. Serve hot with a garnish of seaweed and enjoy!
