Ingredients

  • 1 cup moong dal (split mung beans)
  • 2 cups spinach, washed and chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 1 teaspoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1 teaspoon red chili powder
  • 2 tablespoons vegetable oil
  • Salt to taste

Directions

  1. Soak the moong dal in water for at least 30 minutes.
  2. In a large pot, heat the oil over medium heat. Add the cumin seeds and allow them to sizzle for 30 seconds.
  3. Add the chopped onions and garlic and sauté for 3-4 minutes until the onions are translucent.
  4. Add the grated ginger and all the spices (turmeric powder, garam masala, and red chili powder) and stir to combine.
  5. Add the chopped spinach and sauté for 3-4 minutes until the spinach is wilted.
  6. Add the drained moong dal and stir to combine.
  7. Add 2 cups of water and bring to a boil.
  8. Reduce the heat to low and simmer for 15-20 minutes until the dal is cooked through.
  9. Season with salt to taste.
  10. Serve hot with your favorite accompaniments.
