Ingredients

  • 1 bag (16 oz) frozen tater tots
  • 1 cup cooked black beans
  • 1 cup firm tofu, crumbled
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup vegan cheese sauce
  • 1/4 cup diced tomatoes
  • 1/4 cup sliced black olives
  • 1/4 cup sliced green onions
  • 1/4 cup chopped cilantro
  • 1/4 cup pickled jalapenos

Directions

  1. Preheat your oven according to the instructions on the tater tots package.
  2. Spread the frozen tater tots in a single layer on a baking sheet.
  3. Bake the tater tots according to the package instructions until they are crispy and golden brown.
  4. While the tater tots are baking, prepare the seasoned tofu by heating olive oil in a skillet over medium heat.
  5. Add crumbled tofu to the skillet and cook for 5-7 minutes, until lightly browned and crispy.
  6. In a small bowl, mix together chili powder, cumin, paprika, garlic powder, onion powder, salt, and black pepper.
  7. Sprinkle the spice mixture over the tofu in the skillet and toss to evenly coat. Remove from heat.
  8. Once the tater tots are done, remove them from the oven and let them cool slightly.
