- In a separate bowl, sprinkle the gelatin over the cold water and let it sit for about 2 minutes to soften.

- Pour the coffee and Baileys mixture into individual shot glasses, filling each glass about halfway.
- Place the shot glasses in the refrigerator and let them set for about 2-3 hours, or until the gelatin is firm.
- Once the gelatin is set, remove the shot glasses from the refrigerator.
- Pour the remaining Baileys Irish Cream over the set gelatin in each shot glass, filling the glasses to the top.
- Place the shot glasses back in the refrigerator and let them set for another 2-3 hours, or until the second layer of gelatin is firm.
