Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 2 sweet potatoes, peeled and cubed
  • 1 red bell pepper, diced
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 bunch kale, stems removed and leaves chopped
  • 1/2 cup smooth peanut butter
  • 1 tablespoon ground cumin
  • 1 tablespoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Chopped peanuts (for garnish)

Directions

  1. Press the Sauté function on the Instant Pot and heat the olive oil.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until the onion becomes translucent.
  3. Add the sweet potatoes and red bell pepper. Sauté for another 2-3 minutes.
  4. Turn off the Sauté function and add the diced tomatoes, vegetable broth, kale, peanut butter, cumin, coriander, turmeric, paprika, cayenne pepper, salt, and black pepper. Stir well to combine.
  5. Secure the lid of the Instant Pot and set the valve to Sealing.
  6. Select the Manual/Pressure Cook setting and set the cooking time for 10 minutes on high pressure.
  7. Once the cooking time is up, carefully quick release the pressure.
  8. Remove the lid and give the stew a good stir.
  9. Taste and adjust the seasoning if necessary.
  10. Serve the stew hot, garnished with fresh cilantro and chopped peanuts.
  11. Enjoy with rice or bread.
