- 1 bunch kale, stems removed and leaves chopped

- 1 tablespoon ground coriander
- 1 teaspoon turmeric
- 1 teaspoon paprika
- 1/2 teaspoon cayenne pepper (adjust to taste)

Directions
- Press the Sauté function on the Instant Pot and heat the olive oil.
- Add the chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until the onion becomes translucent.
- Add the sweet potatoes and red bell pepper. Sauté for another 2-3 minutes.
- Turn off the Sauté function and add the diced tomatoes, vegetable broth, kale, peanut butter, cumin, coriander, turmeric, paprika, cayenne pepper, salt, and black pepper. Stir well to combine.
- Secure the lid of the Instant Pot and set the valve to Sealing.
- Select the Manual/Pressure Cook setting and set the cooking time for 10 minutes on high pressure.
- Once the cooking time is up, carefully quick release the pressure.
- Remove the lid and give the stew a good stir.
