Ingredients
- 1 bag of tortilla chips
- 1 can of black beans
- 1 cup of vegan cheese, shredded
- 1 cup of salsa
- 1 avocado, diced
- 1/2 cup of cherry tomatoes, halved
- 1/4 cup of red onion, finely chopped
- 1/4 cup of fresh cilantro, chopped
- 1 jalapeno, sliced
- 1 lime, cut into wedges
- Salt and pepper, to taste
Directions
- Preheat the oven to 350°F (175°C).
- Spread the tortilla chips on a large baking sheet in an even layer.
- Drain and rinse the black beans, then sprinkle them evenly over the tortilla chips.
- Sprinkle the shredded vegan cheese over the nachos.
- Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
- Meanwhile, prepare the toppings. In a small bowl, mix together the diced avocado, cherry tomatoes, red onion, jalapeno, and cilantro. Season with salt and pepper to taste.
- Remove the nachos from the oven and let them cool slightly.
