Ingredients

  • 1 bag of tortilla chips
  • 1 can of black beans
  • 1 cup of vegan cheese, shredded

  • 1 avocado, diced

  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of fresh cilantro, chopped
  • 1 jalapeno, sliced

Directions

  1. Preheat the oven to 350°F (175°C).
  2. Spread the tortilla chips on a large baking sheet in an even layer.
  3. Drain and rinse the black beans, then sprinkle them evenly over the tortilla chips.
  4. Sprinkle the shredded vegan cheese over the nachos.
  5. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly.
  6. Meanwhile, prepare the toppings. In a small bowl, mix together the diced avocado, cherry tomatoes, red onion, jalapeno, and cilantro. Season with salt and pepper to taste.
