  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup sliced jalapenos
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 avocado
  • 1/4 cup sour cream
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Directions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, and cook until onions are translucent.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Add cumin, chili powder, paprika, salt, and black pepper to the skillet. Stir well to coat the meat with spices. Remove from heat and set aside.
  5. Spread a layer of tortilla chips on a baking sheet. Sprinkle half of the cheddar cheese and Monterey Jack cheese over the chips.
  6. Spread the cooked ground beef mixture evenly over the cheese layer. Top with jalapenos, diced tomatoes, and red bell pepper.
  7. Sprinkle the remaining cheese over the toppings.
  8. Bake in the preheated oven for 10-15 minutes, or until the cheese is melted and bubbly.
  9. Meanwhile, in a blender, combine avocado, sour cream, lime juice, salt, and pepper. Blend until smooth and creamy.
  10. Remove the nachos from the oven and drizzle the avocado sauce over the top. Sprinkle with fresh cilantro.
  11. Serve hot and enjoy!
