Perfect for a summer barbecue or a weeknight dinner in any season.

Ingredients

  • 2 lb boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 cup coconut milk
  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground ginger
  • 1/2 tsp ground allspice
  • 1/4 tsp cayenne pepper
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 red onion, cut into chunks
  • 1 pineapple, peeled, cored, and cut into chunks
  • Salt and pepper, to taste
  • Wooden skewers, soaked in water for 30 minutes

Directions

  1. In a bowl, combine the coconut milk, lime juice, garlic, cumin, coriander, ginger, allspice, and cayenne pepper. Add the chicken cubes and marinate for at least 30 minutes, or up to 4 hours in the refrigerator.
  2. Preheat the grill to medium-high heat. Thread the marinated chicken cubes onto the skewers, alternating with the bell peppers, onion, and pineapple.
  3. Season the skewers with salt and pepper. Place the kabobs on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender and slightly charred.
  4. Serve the grilled chicken kabobs hot off the grill, garnished with fresh cilantro and a squeeze of lime juice. Enjoy the taste of the Caribbean from your own backyard!
  5. Note: For an extra kick of heat, add more cayenne pepper to the marinade, or serve with a side of hot sauce for dipping.
