Ingredients

  • 2 pounds chicken pieces (bone-in and skin-on)
  • 2 tablespoons vegetable oil
  • 1 onion, chopped

  • 1 tablespoon curry powder

  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 can (14 ounces) diced tomatoes
  • 1 cup chicken broth
  • 1 scotch bonnet pepper (optional, for heat)
  • 2 potatoes, peeled and diced
  • 1 carrot, peeled and diced
  • 1 bell pepper, diced
  • 1/4 cup chopped fresh cilantro or parsley, for garnish

Directions

  1. In a large pot or Dutch oven, heat the vegetable oil over medium heat.
  2. Add the onion and garlic and sauté until softened and fragrant, about 5 minutes.
  3. Add the curry powder, turmeric, paprika, thyme, oregano, salt, black pepper, and cayenne pepper. Stir well to coat the onions and garlic with the spices.
  4. Add the chicken pieces to the pot and brown them on all sides, about 5 minutes.
  5. Pour in the diced tomatoes with their juice and chicken broth. If using, add the whole scotch bonnet pepper for extra heat.
  6. Bring the mixture to a simmer and cover the pot. Let it cook for about 30 minutes, or until the chicken is cooked through and tender.
  7. Add the diced potatoes, carrot, and bell pepper to the pot. Cover again and cook for an additional 15 minutes, or until the vegetables are tender.
  8. Remove the scotch bonnet pepper if using, and discard.
