Ingredients
- 1 pound dried navy beans
- 4 slices bacon, chopped
- 1 medium onion, diced
- 1/4 cup molasses
- 1/4 cup brown sugar
- 2 tablespoons Dijon mustard
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cups water
Directions
- Rinse the navy beans under cold water and pick out any debris or stones. Place the beans in a large pot and cover with water. Let soak overnight.
- Drain and rinse the soaked beans. In the same pot, add the beans, bacon, onion, molasses, brown sugar, Dijon mustard, salt, pepper, and water.
- Bring the pot to a boil over medium-high heat. Reduce the heat to low, cover, and simmer for 2 to 3 hours, or until the beans are tender and the liquid has thickened.
- Stir occasionally to prevent the beans from sticking to the bottom of the pot.
- Once the beans are cooked, remove from heat and let them cool slightly before serving.
- Serve hot as a side dish or as a main course with cornbread.
