Ingredients

  • 1 large fennel bulb, trimmed and thinly sliced
  • 1/2 cup diced red onion
  • 1/2 cup diced celery
  • 2 cups cherry tomatoes, halved
  • 1/2 cup roughly chopped watercress
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • Salt and freshly ground pepper, to taste

Directions

  1. In a large bowl, combine the fennel, red onion, celery, tomatoes, watercress, and parsley.
  2. In a small bowl, whisk together the olive oil, vinegar, honey, salt, and pepper until blended.
  3. Pour the dressing over the salad and toss to combine.
