Ingredients

  • 4 large bell peppers
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can diced tomatoes
  • 1/2 cup crumbled feta cheese
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • Salt and pepper to taste
  • Olive oil for cooking

Directions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, heat olive oil over medium heat. Add the onion and garlic and cook until softened.
  4. Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  5. Stir in the cooked rice, diced tomatoes, oregano, basil, salt, and pepper. Cook for another 5 minutes.
  6. Remove the skillet from heat and stir in the feta cheese.
  7. Stuff each bell pepper with the beef and rice mixture.
  8. Place the stuffed peppers in a baking dish and cover with foil.
  9. Bake in the preheated oven for 30-35 minutes or until the peppers are tender.
  10. Remove the foil and bake for an additional 5-10 minutes to brown the tops.
  11. Serve hot and enjoy!
