Ingredients

  • 1 tablespoon of vegetable oil
  • 2 cloves of garlic, minced
  • 1 teaspoon of grated fresh ginger
  • 1 tablespoon of Thai green curry paste
  • 1/2 cup of coconut milk
  • 1/2 cup of chicken broth
  • 1/2 pound of prawns, peeled and deveined
  • 1 tablespoon of fish sauce
  • 1 tablespoon of sugar
  • 1/4 cup of fresh basil leaves, chopped
  • 1/4 cup of fresh cilantro leaves, chopped

Directions

  1. In a large skillet, heat the oil over medium heat. Add the garlic and ginger and cook, stirring, for 1 minute.
  2. Add the curry paste and cook, stirring, for 1 minute.
  3. Add the coconut milk, chicken broth, prawns, fish sauce, and sugar. Simmer for 5 minutes, or until the prawns are cooked through.
  4. Stir in the basil and cilantro and simmer for 1 minute.
  5. Serve with steamed rice and enjoy!
