Ingredients
- 1 tablespoon of vegetable oil
- 2 cloves of garlic, minced
- 1 teaspoon of grated fresh ginger
- 1 tablespoon of Thai green curry paste
- 1/2 cup of coconut milk
- 1/2 cup of chicken broth
- 1/2 pound of prawns, peeled and deveined
- 1 tablespoon of fish sauce
- 1 tablespoon of sugar
- 1/4 cup of fresh basil leaves, chopped
- 1/4 cup of fresh cilantro leaves, chopped
Directions
- In a large skillet, heat the oil over medium heat. Add the garlic and ginger and cook, stirring, for 1 minute.
- Add the curry paste and cook, stirring, for 1 minute.
- Add the coconut milk, chicken broth, prawns, fish sauce, and sugar. Simmer for 5 minutes, or until the prawns are cooked through.
- Stir in the basil and cilantro and simmer for 1 minute.
- Serve with steamed rice and enjoy!
