Ingredients

  • 1 cup cooked white rice
  • 1 tablespoon vegetable oil
  • 1/2 onion, diced
  • 1/2 cup diced pineapple
  • 1/2 cup cooked chicken, diced
  • 1 teaspoon fish sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon brown sugar
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon red pepper flakes
  • 2 tablespoons chopped fresh cilantro

Directions

  1. Heat the vegetable oil in a large skillet over medium-high heat.
  2. Add the onion and cook for 3 minutes, stirring occasionally.
  3. Add the pineapple and cook for 3 minutes more.
  4. Add the chicken and cook for 2 minutes more.
  5. Add the cooked rice and stir to combine.
  6. Add the fish sauce, soy sauce, brown sugar, ginger, and red pepper flakes.
  7. Stir to combine and cook for 2 minutes more.
  8. Stir in the cilantro and remove from the heat.
  9. Serve warm.
