  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Directions

  1. Preheat oven to 350°F.
  2. Season the short ribs with salt and pepper.
  3. Heat olive oil in a large dutch oven over medium-high heat.

  6. Add tomato paste, thyme, and rosemary. Cook for a minute until fragrant.
  7. Pour in the red wine to deglaze the pot, scraping up any browned bits.
  8. Return the short ribs to the pot and pour in beef broth until the ribs are almost covered.
  9. Cover and place in the oven. Cook for 3 hours, then uncover and cook for an additional hour until the meat is tender.
