Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1-inch piece fresh ginger, minced
  • 1/4 cup soy sauce
  • 1/4 cup hoisin sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon Chinese five-spice powder
  • 4 cups beef broth
  • 3 carrots, peeled and cut into chunks
  • 2 potatoes, peeled and cut into chunks
  • 1 cup frozen peas
  • 2 tablespoons cornstarch mixed with 2 tablespoons water
  • Green onions, for garnish
  • Cooked rice, for serving

Directions

  1. Press the 'Saute' button on the Instant Pot and heat some oil.
  2. Add the beef cubes in batches and brown on all sides. Remove from the pot and set aside.
  3. Add the onion, garlic, and ginger to the pot and sauté until fragrant.
  4. Stir in the soy sauce, hoisin sauce, rice vinegar, brown sugar, and Chinese five-spice powder.
  5. Add the beef back to the pot along with the beef broth. Close the lid and set the Instant Pot to 'Manual' for 30 minutes.
  6. After the cooking time is up, release the pressure manually and add the carrots and potatoes to the pot.
  7. Close the lid again and cook on 'Manual' for an additional 10 minutes.
  8. Carefully release the pressure again, then stir in the peas and cornstarch mixture.
  9. Let the stew thicken for a few minutes, then serve hot over cooked rice.
  10. Garnish with sliced green onions before serving.
