Ingredients
- 2 pounds beef chuck, cut into 1-inch cubes
- 1 onion, diced
- 4 cloves garlic, minced
- 1-inch piece fresh ginger, minced

- 1/4 cup hoisin sauce
- 2 tablespoons rice vinegar
- 1 tablespoon brown sugar
- 1 teaspoon Chinese five-spice powder
- 4 cups beef broth
- 3 carrots, peeled and cut into chunks
- 2 potatoes, peeled and cut into chunks
- 1 cup frozen peas
- 2 tablespoons cornstarch mixed with 2 tablespoons water
- Green onions, for garnish
- Cooked rice, for serving
Directions
- Press the 'Saute' button on the Instant Pot and heat some oil.
- Add the beef cubes in batches and brown on all sides. Remove from the pot and set aside.
- Add the onion, garlic, and ginger to the pot and sauté until fragrant.
- Stir in the soy sauce, hoisin sauce, rice vinegar, brown sugar, and Chinese five-spice powder.
- Add the beef back to the pot along with the beef broth. Close the lid and set the Instant Pot to 'Manual' for 30 minutes.
- After the cooking time is up, release the pressure manually and add the carrots and potatoes to the pot.
- Close the lid again and cook on 'Manual' for an additional 10 minutes.
- Carefully release the pressure again, then stir in the peas and cornstarch mixture.
- Let the stew thicken for a few minutes, then serve hot over cooked rice.
- Garnish with sliced green onions before serving.
