Ingredients

  • 2 tablespoons olive oil
  • 1/4 cup all-purpose flour
  • 2 tablespoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 2 cups chicken broth
  • 1/4 cup tomato paste

Directions

  1. In a medium saucepan, heat the oil over medium heat.
  2. Whisk in the flour and cook for 1 minute.
  3. Add the chili powder, garlic powder, cumin, oregano, and salt and stir to combine.
  4. Slowly whisk in the chicken broth, stirring constantly to prevent lumps from forming.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for 5 minutes.
  6. Stir in the tomato paste and simmer for an additional 3 minutes.
  7. Remove from heat and serve with your favorite enchiladas.
