Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup cheddar cheese, shredded
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onions
  • 1/4 cup diced bell peppers
  • 1/4 cup chopped fresh cilantro
  • 1 teaspoon cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 large flour tortillas
  • Oil, for frying
  • Salsa, for serving
  • Sour cream, for serving

Directions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the cooked chicken, cheddar cheese, diced tomatoes, onions, bell peppers, cilantro, cumin, chili powder, garlic powder, salt, and black pepper. Mix well.
  3. Lay out the flour tortillas and spoon the chicken mixture onto the center of each tortilla.
  4. Fold the sides of the tortilla over the filling, then roll it up tightly.
  5. Heat oil in a large skillet over medium heat. Carefully place the chimichangas, seam side down, into the hot oil. Cook for 2-3 minutes on each side or until golden brown and crispy.
  6. Transfer the cooked chimichangas to a baking sheet and bake in the preheated oven for 10-15 minutes, or until heated through.
