Ingredients

  • For the dough:
  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth

  • 1 cup cooked chicken, shredded
  • 1 small onion, finely diced
  • 2 cloves garlic, minced
  • 1/2 cup cream cheese
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley, chopped
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • For the coating:
  • 2 eggs, beaten
  • 2 cups breadcrumbs
  • Oil for frying

Directions

  1. In a large saucepan, bring the chicken broth to a boil.
  2. Add the shredded chicken to the broth and let it simmer for about 10 minutes.
  3. Remove the chicken from the broth and set aside.
  4. In the same saucepan, melt the butter over medium heat.
  5. Add the flour and salt, stirring constantly until it forms a smooth dough.
  6. Transfer the dough to a work surface and let it cool for a few minutes.
  7. In a separate pan, heat the olive oil and sauté the onion and garlic until translucent.
  8. Add the cooked chicken, cream cheese, parsley, paprika, salt, and pepper to the pan.
  9. Stir well until the mixture is creamy and well combined. Remove from heat.
  10. Take a golf ball-sized portion of dough and flatten it into a disk in the palm of your hand.
  11. Place a spoonful of the chicken filling in the center of the disk, then close it up and shape it into a tear-drop (or drumstick) shape.
  12. Repeat this process with the remaining dough and filling.
  13. Dip each coxinha in beaten eggs, then coat it with breadcrumbs, pressing gently to make sure the breadcrumbs adhere to the dough.
  14. In a deep frying pan, heat enough oil to deep fry the coxinhas.
  15. Fry the coxinhas in batches until they turn golden brown and crispy.
  16. Remove from the oil and drain on a paper towel-lined plate.
