1 cup tart apples, diced (granny smith or honeycrisp work best)
1/4 cup white sugar
2 tbsp freshly grated ginger
1 1/2 cups apple cider vinegar
1/4 cup honey
Directions
In a medium bowl, combine the diced apples, sugar, and ginger. Mix until the apples are evenly coated with the sugar.
Transfer the mixture to a large jar or container and pour in the apple cider vinegar. Cover the jar or container and let sit in the refrigerator for 24 hours.
After 24 hours, strain the mixture through a fine mesh strainer. Discard the solids.
Add the honey to the strained liquid and stir until fully combined. Transfer the shrub to a clean jar or container.
Serve the shrub chilled or over ice. Enjoy!
