Ingredients

  • 3 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups Irish stout beer
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon cayenne pepper
  • 2 cups shredded cheddar cheese
  • 1/2 cup shredded Gruyere cheese
  • Assorted vegetables and crusty bread, for serving

Directions

  1. In a large saucepan, melt the butter over medium heat. Add the garlic and cook until fragrant, about 1 minute.
  2. Stir in the flour and cook for 1 minute, stirring constantly.
  3. Slowly add the beer, whisking constantly until the mixture is smooth. Bring to a simmer and cook for 3 minutes, stirring often.
  4. Stir in the Worcestershire sauce, dry mustard, and cayenne pepper. Reduce the heat to low and stir in the cheeses a handful at a time, stirring until melted and smooth.
  5. Transfer the fondue to a fondue pot or slow cooker and keep warm over low heat. Serve with vegetables and crusty bread.
