Ingredients
2 tablespoons olive oil
4 cloves garlic, minced
2 zucchini, sliced into 1/4-inch thick rounds
1/2 cup sliced almonds
Salt and pepper to taste
1 tablespoon freshly squeezed lemon juice
Directions
Heat the olive oil in a large skillet over medium heat.
Add the garlic and sauté for about 1 minute, or until fragrant.
Add the zucchini rounds and sauté for 6-7 minutes, or until just tender.
Add the almonds to the skillet and cook for an additional 2-3 minutes, or until lightly toasted.
Season with salt and pepper to taste.
Stir in the lemon juice and remove from heat.
Serve warm.
