Quick Zucchini Side Dish with Toasted Almonds

Ingredients

  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 zucchini, sliced into 1/4-inch thick rounds
  • 1/2 cup sliced almonds
  • Salt and pepper to taste
  • 1 tablespoon freshly squeezed lemon juice

Directions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the garlic and sauté for about 1 minute, or until fragrant.
  3. Add the zucchini rounds and sauté for 6-7 minutes, or until just tender.
  4. Add the almonds to the skillet and cook for an additional 2-3 minutes, or until lightly toasted.
  5. Season with salt and pepper to taste.
  6. Stir in the lemon juice and remove from heat.
  7. Serve warm.
