Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup long grain rice
  • 2 cups vegetable broth
  • 1 can (15 ounces) black-eyed peas, drained and rinsed
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley, for garnish

Directions

  1. Set your Instant Pot to sauté and heat the olive oil. Add the onion and garlic and sauté until onions are translucent, about 5 minutes.
  2. Add the rice and vegetable broth and stir to combine. Add the remaining ingredients (except for the parsley) and stir to combine.
  3. Secure the lid on the Instant Pot and make sure the pressure release valve is in the sealed position. Cook on high pressure for 5 minutes, then let the pressure release naturally for 10 minutes before opening the lid.
  4. Gently fluff the Hoppin' John with a fork and serve hot, garnished with fresh parsley.
