Roasted Brussels Sprouts with Parmesan and Lemon

Ingredients

  • 1 pound Brussels sprouts, trimmed and cut in half
  • 2 tablespoons olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup shredded Parmesan cheese
  • 2 tablespoons freshly squeezed lemon juice

Directions

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Place Brussels sprouts on the prepared baking sheet. Drizzle with olive oil and season with salt and pepper.
  3. Bake in preheated oven for 25 minutes, stirring once halfway through.
  4. Remove from oven and sprinkle with Parmesan cheese. Return to oven and bake for an additional 5 minutes, or until Brussels sprouts are golden and crispy.
  5. Drizzle with lemon juice and serve warm.
