Unstuffed Bell Peppers
Ingredients
1 pound ground beef
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon onion powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 15 ounce can black beans, drained and rinsed
1 15 ounce can corn, drained
1 10 ounce can diced tomatoes with green chilies
1 8 ounce package cream cheese, softened
1 cup shredded cheddar cheese
6-8 8-inch flour tortillas
Directions
Preheat oven to 350 degrees F.
In a large skillet over medium-high heat, cook the ground beef until no longer pink. Drain any excess grease.
Stir in the chili powder, cumin, onion powder, garlic powder, salt, and pepper and cook for 1 minute.
Add the black beans, corn, and diced tomatoes and cook for 3-4 minutes, stirring occasionally.
Remove from heat and stir in the cream cheese until melted and combined.
Spray a 9x13 inch baking dish with non-stick cooking spray.
Lay 2-3 tortillas in the bottom of the dish, overlapping them slightly if needed.
Spread half of the beef mixture over the tortillas.
Sprinkle with 1/2 cup of the cheddar cheese.
Layer 2-3 more tortillas over the top, overlapping them slightly if needed.
Spread remaining beef mixture over the top of the tortillas.
Sprinkle with remaining 1/2 cup cheddar cheese.
Bake for 25-30 minutes, or until cheese is melted and bubbly.
Serve warm.
Interesting Facts
Taco Tuesday Casserole is a great way to use up leftover tortillas.
Feel free to add other ingredients such as diced onions, bell peppers, or jalapenos.
You can also add canned diced green chiles or salsa for more flavor.
This recipe can easily be made vegetarian by omitting the ground beef and using black beans as the main protein source.
This casserole can be served with sour cream, avocado, or your favorite Mexican toppings.
