Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup oats
  • 1/2 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup vegetable oil
  • 1/4 cup orange juice
  • 1 teaspoon vanilla extract
  • 1/2 cup dried cranberries
  • 1/4 cup chopped walnuts (optional)

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, whisk together the flour, oats, brown sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix together the oil, orange juice, and vanilla.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the cranberries and walnuts, if using.
  6. Drop tablespoons of the cookie dough onto a parchment-lined baking sheet. Bake for 10-12 minutes, until the edges of the cookies are golden brown.
  7. Let cool before serving.
