Ingredients

  • 1 pound ground beef
  • 2 bell peppers, diced
  • 1 small onion, diced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 tablespoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup water
  • 1/2 cup uncooked white rice
  • 1 cup mozzarella cheese

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a large skillet, cook beef over medium heat until browned. Add bell peppers, onion, tomatoes, garlic, oregano, basil, salt, and pepper. Stir in water and rice. Bring to a boil, reduce heat, and simmer for 20 minutes or until the rice is tender.
  3. Transfer the mixture to a 9x13-inch baking dish. Sprinkle with cheese.
  4. Bake for 10 minutes or until the cheese is melted and bubbly.
