Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon ground turmeric
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon salt
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium apples, peeled, cored, and diced
  • 1/2 cup chicken broth
  • 1/2 cup plain yogurt
  • 1/4 cup chopped fresh cilantro

Directions

  1. Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Add the cumin, coriander, turmeric, cinnamon, cayenne pepper, and salt and stir to combine. Add the chicken and cook until lightly browned, about 5 minutes.
  3. Add the apples and chicken broth and bring to a simmer. Reduce the heat to low, cover, and simmer for 15 minutes.
  4. Stir in the yogurt and cilantro and cook for an additional 5 minutes. Serve over cooked rice, if desired.
