Ingredients
- 2 tablespoons olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper
- 1/2 teaspoon salt
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium apples, peeled, cored, and diced
- 1/2 cup chicken broth
- 1/2 cup plain yogurt
- 1/4 cup chopped fresh cilantro
Directions
- Heat the oil in a large skillet over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Add the cumin, coriander, turmeric, cinnamon, cayenne pepper, and salt and stir to combine. Add the chicken and cook until lightly browned, about 5 minutes.
- Add the apples and chicken broth and bring to a simmer. Reduce the heat to low, cover, and simmer for 15 minutes.
- Stir in the yogurt and cilantro and cook for an additional 5 minutes. Serve over cooked rice, if desired.
