Ingredients

  • 1 can of hearts of palm, drained and sliced
  • 1 mango, peeled and diced
  • 1/2 papaya, peeled and diced
  • 1/4 cup red onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Directions

  1. In a large bowl, combine the hearts of palm, mango, papaya, red onion, and cilantro.
  2. In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and mix to combine.
