Ingredients
- 2 medium zucchini, sliced lengthwise into 1/4 inch slices
- 1/2 cup of all-purpose flour
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of dried oregano
- 1/4 teaspoon of black pepper
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of olive oil
- 1/4 cup of panko breadcrumbs
Directions
- Preheat oven to 400°F. Grease a baking sheet with olive oil.
- In a shallow bowl, combine the flour, garlic powder, oregano, and pepper. Mix together.
- Dredge the zucchini slices in the flour mixture, coating both sides. Place the coated zucchini slices on the prepared baking sheet.
- In a separate bowl, combine the Parmesan cheese and panko breadcrumbs. Sprinkle the cheese and breadcrumb mixture over the zucchini slices.
- Drizzle the olive oil over the zucchini slices. Bake in preheated oven for 20 minutes, until golden and crispy.
