Ingredients

  • 2 medium zucchini, sliced lengthwise into 1/4 inch slices
  • 1/2 cup of all-purpose flour
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of dried oregano
  • 1/4 teaspoon of black pepper
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of olive oil
  • 1/4 cup of panko breadcrumbs

Directions

  1. Preheat oven to 400°F. Grease a baking sheet with olive oil.
  2. In a shallow bowl, combine the flour, garlic powder, oregano, and pepper. Mix together.
  3. Dredge the zucchini slices in the flour mixture, coating both sides. Place the coated zucchini slices on the prepared baking sheet.
  4. In a separate bowl, combine the Parmesan cheese and panko breadcrumbs. Sprinkle the cheese and breadcrumb mixture over the zucchini slices.
  5. Drizzle the olive oil over the zucchini slices. Bake in preheated oven for 20 minutes, until golden and crispy.
  6. Serve and enjoy!
