Ingredients
1 cup Basmati Rice
1 Onion, chopped
1 Carrot, chopped
1/2 cup Green Peas
1/2 cup Corn
1 Green Chili, chopped
2 cloves Garlic, minced
1 inch Ginger, grated
1 teaspoon Cumin Seeds
1 teaspoon Coriander Powder
1/2 teaspoon Turmeric Powder
1/2 teaspoon Chili Powder
1 tablespoon Ghee or Oil
Salt to taste
Cilantro for garnish
Directions
Wash and soak the rice for 15 minutes.
Heat the ghee or oil in a pan over medium heat.
Add the cumin seeds and let it splutter.
Add the chopped onion, garlic, ginger and green chili, sauté for a few minutes.
Add the chopped carrot, green peas and corn, sauté for a few minutes.
Add the coriander powder, turmeric powder and chili powder, mix well.
Add the soaked rice and stir to combine.
Add enough water to cook the rice, about 2 cups.
Season with salt to taste.
Cover and cook for 15 minutes or until the rice is cooked.
Garnish with cilantro and serve hot.
