Ingredients
- 1 cup Basmati Rice
- 1 Onion, chopped
- 1 Carrot, chopped
- 1/2 cup Green Peas
- 1/2 cup Corn
- 1 Green Chili, chopped
- 2 cloves Garlic, minced
- 1 inch Ginger, grated
- 1 teaspoon Cumin Seeds
- 1 teaspoon Coriander Powder
- 1/2 teaspoon Turmeric Powder
- 1/2 teaspoon Chili Powder
- 1 tablespoon Ghee or Oil
- Salt to taste
- Cilantro for garnish
Directions
- Wash and soak the rice for 15 minutes.
- Heat the ghee or oil in a pan over medium heat.
- Add the cumin seeds and let it splutter.
- Add the chopped onion, garlic, ginger and green chili, sauté for a few minutes.
- Add the chopped carrot, green peas and corn, sauté for a few minutes.
- Add the coriander powder, turmeric powder and chili powder, mix well.
- Add the soaked rice and stir to combine.
- Add enough water to cook the rice, about 2 cups.
- Season with salt to taste.
- Cover and cook for 15 minutes or until the rice is cooked.
- Garnish with cilantro and serve hot.
