Ingredients

  • 1 cup Basmati Rice
  • 1 Onion, chopped
  • 1 Carrot, chopped
  • 1/2 cup Green Peas
  • 1/2 cup Corn
  • 1 Green Chili, chopped
  • 2 cloves Garlic, minced
  • 1 inch Ginger, grated
  • 1 teaspoon Cumin Seeds
  • 1 teaspoon Coriander Powder
  • 1/2 teaspoon Turmeric Powder
  • 1/2 teaspoon Chili Powder
  • 1 tablespoon Ghee or Oil
  • Salt to taste
  • Cilantro for garnish

Directions

  1. Wash and soak the rice for 15 minutes.
  2. Heat the ghee or oil in a pan over medium heat.
  3. Add the cumin seeds and let it splutter.
  4. Add the chopped onion, garlic, ginger and green chili, sauté for a few minutes.
  5. Add the chopped carrot, green peas and corn, sauté for a few minutes.
  6. Add the coriander powder, turmeric powder and chili powder, mix well.
  7. Add the soaked rice and stir to combine.
  8. Add enough water to cook the rice, about 2 cups.
  9. Season with salt to taste.
  10. Cover and cook for 15 minutes or until the rice is cooked.
  11. Garnish with cilantro and serve hot.
