Ingredients
- 2 pounds sweet potatoes, peeled and chopped
- 2 tablespoons butter
- 1/2 cup packed brown sugar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/2 cup heavy cream
- 1/2 cup chopped pecans
- 1/2 cup mini marshmallows
Directions
- Preheat oven to 350 degrees F (175 degrees C).
- Place sweet potatoes in a large pot, and fill with water to cover. Bring to a boil, and cook until potatoes are tender, about 15 minutes. Drain, and mash the potatoes.
- In a medium bowl, mix together the mashed sweet potatoes, butter, brown sugar, cinnamon, nutmeg, cream, and pecans. Spread the mixture into a 9x13 inch baking dish.
- Bake in preheated oven for 30 minutes. Sprinkle marshmallows over the top, and bake for an additional 5 minutes, or until marshmallows are lightly browned.
