Ingredients
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1/2 cup whole milk
- 2 cups fresh cherries, pitted and halved
- 1/4 cup granulated sugar
Directions
- Preheat the oven to 350ºF (180ºC). Grease an 8-inch round cake pan with butter and dust with flour.
- In a large bowl, whisk together the flour, baking powder, and salt.
- In another bowl, cream together the butter and 3/4 cup sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- Alternately add the dry ingredients and milk to the butter mixture, stirring until just combined.
- Spread the batter into the prepared cake pan and top with the cherries. Sprinkle with the remaining 1/4 cup of sugar.
- Bake for 45 minutes, or until a toothpick inserted into the center comes out clean.
- Cool the cake in the pan for 15 minutes, then turn out onto a wire rack to cool completely.
- Serve warm or at room temperature.
