Ingredients

  • 2 pork tenderloins
  • 2 tablespoons of ground coffee
  • 1 teaspoon of garlic powder
  • 1 teaspoon of smoked paprika
  • 1 teaspoon of dried oregano
  • 1/2 teaspoon of ground cumin
  • 1/2 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1/2 cup of espresso
  • 1/4 cup of honey
  • 2 tablespoons of olive oil

Directions

  1. Preheat the oven to 350°F.
  2. In a small bowl, mix together the ground coffee, garlic powder, smoked paprika, oregano, cumin, salt, and pepper.
  3. Rub the mixture over both pork tenderloins. Place the tenderloins in a baking dish.
  4. In a small saucepan over medium-high heat, combine the espresso and honey. Simmer for 3 minutes, stirring occasionally.
  5. Pour the espresso-honey glaze over the pork tenderloins. Drizzle with olive oil.
  6. Bake for 15-20 minutes, or until the pork reaches an internal temperature of 145°F.
  7. Let the pork rest for 5 minutes before slicing. Serve with the remaining glaze.
